How to make GOZLEME from scratch Gozleme is a traditional savory Turkish flatbread and pastry dish, made of hand-rolled leaves of yufka dough that are filled with various toppings, sealed, and cooked over a griddle. Ingredients: Dough: - 5 cups of flour - 2 cups of warm water - 1 tablespoon OF YEAST 1/2 CUP of olive oil 1 spoon of sugar - 1 teaspoon salt Filling: - 250 gr feta cheese - 250 gr mozzarella cheese - Bunch of parsley 2 bunch of spinach 2 spoon of yogurt Estimated preparation and cooking time : 45 minutes How to make: Combine 2 cup of warm water, 5 cup of all purpose flour, salt and olive oil in a bowl. Knead for 5 minutes or until elastic and leave 5 minutes for resting. Grate mozzarella and feta and mix with chopped parsley. If you don t like parsley, you can use chopped spinach. In other bowl make white sauce. Pour yogurt + olive oil and stir well. It will give your Gozleme good taste and also dough can stick easily to each other by sauce. Take your dough on the bench and make small pieces.(approx. 60 grams) Use your roller and roll it until get thin enough. Spread some white sauce first then put your filling middle of the dough leaf and fold it side by side. Use white sauce as a glue. Heat your pan on the stove and pour some olive oil. Start coking your first Gozleme. Approximately cook each side for 2 minutes.
