These Nanaimo bars are delicious, and with the addition of the coffee and a little hint of salt, it helps to balance out that sweetness. The crust consists of chocolate, coconut, almonds and Graham crumbs. As Duff always says “TOAST YOUR NUTS”, and yes that includes coconut! • • • #fyp #shorts #baking #bake #foodie #food #recipe #recipes #diy #cook #cooking #coffee #dessert #sweets _____________________________ ⭐️•Makes 9 Bars•⭐️ • • • 🍫•Crust•🍫 ➡️ 7 Tablespoons (99g) Unsalted Butter ➡️ 3 Tablespoons (38g) Sugar ➡️ 3/8 Teaspoon Salt ➡️ 1/4 Cup (30g) Cocoa Powder ➡️ 2 1/4 Teaspoons Vanilla Extract ➡️ 1 Egg ➡️ 1 1/3 Cups (160g) Graham Crumbs ➡️ 3/4 Cup (75g) Toasted Coconut ➡️ 2/3 Cup (67g) Toasted Almonds ☕️•Filling•☕️ ➡️ 1/4 Cup (63mL) Heavy Cream ➡️ 2 1/2 Tablespoons Vanilla Custard Powder ➡️ 1 1/2 Cups (180g) Powdered Sugar ➡️ 3/4 Cup (170g) Unsalted Butter ➡️ 1/2 Teaspoon Salt ➡️ 1 Tablespoon (6g) Espresso Powder ➡️ 3/4 Cup (135g) Melted Dark Chocolate • • • 1️⃣. For the crust, melt the butter then add the sugar, salt, cocoa powder and vanilla then mix until the sugar dissolves. Add the egg and cook on LOW until thickened. Fold in the Graham crumbs, coconut and almonds then press into a parchment lined deep dish pan. 2️⃣. For the filling, whip the butter, powdered sugar, espresso powder, salt, vanilla custard powder, and heavy cream until light and fluffy then spread overtop of the crust. 3️⃣. Refrigerate for at least 4 hours then cut into 9 equal squares. Enjoy! ______________________ 💡•Extra Tips & Advice•💡 ➡️ Be sure to cook the mixture for the crust on low heat to prevent it from separating. ➡️ If you like a lighter coffee flavour, put a total of 1/2 tablespoon (3g) of espresso powder. If you want a strong coffee flavour, put a total of 1 1/2 tablespoons (9g) of espresso powder. ➡️ When you make the filling, initially use a whisk attachment to make it fluffy, then finish it off with a paddle attachment to get rid of the extra bubbles. ➡️ If you do not like coffee, you can leave it out and make a nice flavourful vanilla flavoured filling. ➡️ Toasting the coconut and almonds is crucial as it adds a ton of flavour to the crust! ___________________________ If you would like to see more of my creations and recipes, check out my Instagram, Facebook and TikTok pages.
