Beerakaya Enduroyyalu kura in telugu- Dry prawns Ridge gourd curry -
Ridge gourd is cooked with dry prawns (Beerakaya enduroyyalu curry) very tasty recipe and it is very famous dish in south India.
Today I am going to show you how to prepare this recipe in easy way. It can be served hot with rice, roti and phulka.
Ingredients:-
Dry prawns/shrimp (Enduroyyalu) - 1 cup
Ridge gourd (Beerakaya) 1 no
Water – 1 cup
Salt – as per the taste
Oil – 2 Tbspn
Ginger garlic paste - 2 Tspn
Curry leaves – few
Green Chilli – 2-3 no
Onion – 2 medium sized
Turmeric powder – ½ Tspn
Red chilli powder – 2 Tspn
Tomato – 1 medium size
Coriander powder – 1 ½ Tspn
Cumin powder – 1 ½ Tspn
Directions:-
Clean dry prawns by removing tail and head of it.Take a pan, boil water in it and add dry prawns and cook until it is soft.Heat oil in a pan, fry the dry prawns and keep it aside.
Add some more oil if required and add onions, green chill, curry leaves and salt and sauté them. Add ginger garlic paste sauté it then add turmeric powder let it cook for 2 minutes.
Chop ridge gourd into pieces and add to the pan sauté it, add chopped tomato, red chilli powder close with lid and cook for 2 mins.
Remove the lid and add fried dry prawns and cook for 5 mins add little quantity of water and cook for 5 mintues. Add Coriander powder, Cumin powder just cook for 1-2 mints.
Now it is ready to serve hot with rice, roti, phulka.
